Warmia, the north-eastern part of Poland located in central Europe, is in a non-urbanised region where Antonius Caviar sturgeons mature. Tasting Culture

Caviar comes only from sturgeon fish. This royal delicacy has to be properly served and tasted. It is said that you don't eat caviar, you taste it.

Caviar is very sensitive to temperature and should be properly chilled to preserve its freshness. You can keep caviar in the refrigerator but not in the freezer! Proper storage temperature is from -3° C to +3° C. It is very important to keep this range of temperature. You serve caviar in chilled glass dishes (bowls), preferably made of crystal. The bowl should be placed on crushed ice. This guarantees it's fresh flavour.

What is caviar?

Caviar is sturgeon roe which comes only from sturgeon fish. Any other fish roe is not a caviar.

What is the way to get the caviar from the fish?

There are three main ways of extracting caviar from the fish: killing the fish, squeezing it out ovulatory way or doing surgeon operation. Only killing the fish gives you best quality caviar and causes no sufference to the fish. Ovulatory and surgery methods require medicaments and causes stress to the fish. It affects the quality and cause some of the fishes die.

Why I need to store it in so low temperature?

Antonius Caviar is fresh and unpasteurized caviar with no preservatives. It needs to be stored from -3° C to +3° C. Remember to never store it in the freezer!

Why is so soft?

Because is fresh and unpasteurized without any preservatives. This is it’s natural softness and has no loss of quality due to thermal treatment. If the caviar is harder it means that it was pasteurized, semi-pasteurized or some preservatives were added.

Why two different tins have different color?

This is the individual diversity of the fish. The color may vary. Oscietra caviar comes in colors of: grey, brown and olive with golden highlights. Siberian caviar comes in shades from black to light brown.

Why caviar is so salty?

Antonius Caviar has average content 3.5% of salt. It is prepared with the traditional "Malossol" method which means "with a pinch of salt". This is the only one preservative.

Why caviar has so short expiry date?

It is fresh and unpasteurized. It has no preservatives except of salt that's why expiry date is short but this way you get the highest quality caviar.

How you deliver it?

Antonius Caviar is delivered in special packaging always with ice packs which keep maintain the temperature during transportation.

Is it delivery free?

Yes, all deliveries are free and are scheduled always at the best convenience of buyer - even late hours and during the weekend days.

Is is possible to get delivery the same day when order?

How long I should keep it in the fridge?

As in the home fridge usually temperature is more than +3° C we recommend to keep it as short as possible. As we deliver usually next day you can always buy it the day before you plan to use it.

How long I can keep it after opening the tin?

The best is eat it after opening. Otherwise as the caviar is fresh and unpasteurized the best is to consume it within 24h.

Can you pack it as a gift?

Can I take it to the plane?

Yes, but only in check-in baggage. As caviar needs to be transported with frozen ice packs it won't be allowed on board. Due to CITEST certificate (the Convention on International Trade in Endangered Species of Wild Fauna and Flora) you can take only up to 125g to the other country with you.

Why I should not use metal spoon?

Metal interacts with caviar and leaves unpleasant taste. Mother of pearl spoon is the best way to taste caviar.

Is it caviar healthy?

Yes, it is. It has a lot of good fats and vitamins. Antonius Caviar has no preservatives and no medicaments are used for sturgeon breeding. It gives you the highest quality and healthiest caviar.
